“the insurance of a safe alimentation”
European directive 93/43/CE of 14/06/93 council, the said “Hygiene directive”
relative to the hygiene of food-stuff products (reinforcing the responsibility of the industry),
has been transposed in the French law for the adoption of ministerial decree of 29/09/97
regulating hygiene conditions applicable in collective catering
with social criterion as well as establishments having a central cooking activity.
